Some of you may have noticed that my family is, for many reasons, switching to a vegan, soy- and gluten-free diet. As I like food to be healthy, I also need it to be really yummy. That means – it should be objectively delicious, it should be tasty for everyone. My veggie meals must be good even for meat lovers and my sweets must have nothing to be ashamed of when placed next to Nutella muffins.
A friend of mine (who is the biggest healthy diets guru I personally know) have recently shared with me a muffin recipe that resulted in best vegan, soy and gluten free muffins I have tried so far. It is based on a regular muffin recipe (you can see it here). These muffins are delicious and taste like Christmas!
You will need:
- 1 1/2 glass flour (I used rice flour, but buckwheat also works well),
- 1/4 glass poppy seeds,
- 8 spoons of vegetable oil (even olive oil will work and not spoil the taste)
- 1 1/2 tsp baking powder (gluten free)
- 2 apples, grated
- 1/2 glass coconut milk
- 3 tsps of cinnamon
- 1 glass sugar or xylitol
Mix it all well, fill in the muffin tray and bake for 20 mins in the oven preheated to 180°C. That’s it! Enjoy!
